How to dial in espresso

Direct answer: dialling in espresso means fixing a repeatable dose and target yield, observing the flow and time, tasting the result, then changing one variable at a time. A 1:2 dose-to-yield ratio can be a useful first test—for example, 18 g of dry coffee producing 36 g of espresso—but it is an example, not a universal recipe.

Dialling in espresso means adjusting a repeatable recipe until the cup tastes balanced. The goal is not to chase one perfect number: it is to control dose, yield, grind and time so that taste tells you what to change next.

Start with a simple espresso recipe

Use a scale and begin with a brew ratio near 1:2. For example, 18g of ground coffee producing about 36g of espresso is a useful starting point. Aim initially for roughly 25–32 seconds from starting the pump, but treat time as a diagnostic clue rather than a definition of quality.

  1. Warm the machine, portafilter and cup fully.
  2. Weigh the coffee dose and keep it consistent.
  3. Distribute the grounds evenly and tamp level.
  4. Start the shot and stop at the target beverage weight.
  5. Record the yield and time, then taste once the cup is cool enough.

Let taste choose the adjustment

If the espresso tastes sharp, thin or sour

It may be under-extracted. Grind slightly finer to slow the shot, or increase the final yield a little. Make one change, repeat the shot and compare.

If it tastes bitter, dry or hollow

It may be over-extracted. Grind slightly coarser or reduce the yield. Very high water temperature, stale residue or uneven preparation can also create bitterness.

If it tastes both sour and bitter

Uneven extraction is likely. Check distribution, tamp level and whether the coffee bed shows signs of channelling. A consistent preparation routine often matters more than another grind adjustment.

Change only one variable at a time

Keep dose and yield fixed while adjusting grind first. Moving several variables together makes it difficult to understand why the next cup changed. Purge retained grounds after a grind adjustment so the new setting reaches the basket.

Water, freshness and equipment

Use clean water suitable for coffee and keep the machine and grinder free of old oils. Fresh coffee releases carbon dioxide, so its behaviour can change during the first days after roasting. Recheck the grind as the coffee ages rather than assuming one setting will remain correct.

A repeatable espresso dial-in workflow

Espresso is easier to diagnose when the basket, dose, distribution, tamp, target yield and machine routine stay consistent. The numbers below are observation points rather than a definition of a correct shot.

1. Choose a sensible dose for the basket

Use a dose that the basket can accommodate without the dry puck touching the shower screen. Keep that dose fixed during the first adjustments. If the basket is clearly overfilled or underfilled, correct the dose before using grind changes to solve every problem.

2. Choose a starting yield

Express yield as a ratio so the recipe can be scaled. At 1:2, an 18 g dose gives a 36 g beverage target. Use the espresso ratio calculator for the arithmetic. A longer or shorter ratio may taste better for a particular coffee, machine and preference.

3. Record time, but let taste make the decision

Start the timer consistently and note when the target yield is reached. Time helps reveal whether a grind change altered resistance, but an isolated number cannot tell you whether the cup is balanced. Taste once the espresso has cooled enough for sweetness, acidity, bitterness and texture to be clearer.

4. Change one variable

If the shot reaches the target much faster than the previous attempt and tastes weak or sharply sour, grind a little finer. If it runs much more slowly and tastes harsh, dry or heavily bitter, grind a little coarser. Make small changes, purge retained grounds where relevant, and repeat the same preparation.

When to change dose instead of grind

Change dose when the basket fit is unsuitable, the puck contacts the shower screen, the machine cannot produce the intended beverage size, or a deliberate strength change is required. Once the dose changes, recalculate the yield and treat it as a new recipe.

How coffee age can affect the routine

As coffee changes after roasting, the same grinder setting may no longer produce the same flow. Record the roast date when known, the date opened and the dial-in result. Make the next small adjustment from evidence in the cup rather than assuming every coffee follows the same schedule.
